Saag Paneer
I’m often disappointed by this dish in Indian restaurants in the US so I decided to make my version and share it with you.
The main flavors in this dish are of the spinach and garlic. The dish uses minimal spices to preserve the vibrant green color and flavor of the spinach.

Ingredients
Saag Paneer
1. 2 bunches of spinach
2. 1 tsp baking soda (for blanching)
3. 3 cloves of garlic
4. 1 Bird’s eye chili
5. 1 tbsp chopped cilantro stems
6. Ghee or neutral oil
7. 2 tbsp chopped garlic
8. 2 whole Kashmiri red chili
9. 1 tsp cumin seeds
10. Salt, as needed
11. 1 tsp sugar
Spice Mix
1. 1 tsp coriander seeds
2. 2 tsp cumin seeds
3. 2 tsp black peppercorns
4. Salt
