Spiced Butternut Squash Soup
The colder months are perfect for a warm comforting bowl of rich, hearty soup. Butternut squash soup is one of my favorites and today I'm going to share my recipe that adds an extra layer of flavor to it.
You can use any type of winter squash you like. Pumpkin works well here too.
Serves 2
Ingredients
Soup
1 small Butternut squash chopped into 1 inch cubes
6 whole garlic cloves, slightly crushed
2 tbsp Ghee
4 cups chicken/vegetable stock
1 inch cinnamon stick
4 cloves
2 black cardamom
Salt
2 tsps heavy cream (for garnish)
Tempering
1 tbsp Ghee
1 tsp Bengali five spice
3 whole dried red chilies
