Teaching Myself How to Recreate the Flavors of Home was the Most Frustrating Experience Until I Learned the Secret that Makes our Grandmother’s Cooking So Effortless
I barely cooked Indian food before I moved to the US.
I had studied my grandmother’s every move in the kitchen and cooked on special occasions but I barely got to practice it because cooking was her way of showing her love to us.
But I didn’t know that I was about to have a rude awakening because I had taken the flavors I grew up eating for granted. Months went by and I couldn’t find a single Indian restaurant that satisfied my cravings. All the restaurants served the same few dishes over and over again.
I wasn’t Indian enough for the Indians in India and I wasn’t American enough either. I felt confused about who I was and felt less and less grounded as the months went on.
Recreating familiar flavors felt like the only accessible way to reconnect with my roots.
I spent hours searching for recipes on YouTube, I read countless blogs and experimented with new recipes every weekend. Luckily, I could call my grandmother and get her advice every time I got stuck. However, all I had to show for were a few favorites from my childhood in Kolkata, a drop in the ocean of food memories I cherished.
I was ready to give up.
The problem was that every recipe told me what to do and never revealed why or how. That meant I never learned the techniques that are the foundation of Indian cuisine. The videos and blogs didn’t talk about how to develop my culinary instincts so I’d could create my own dishes and preserve the family traditions I longed for.
I knew I had to try something completely different to stop wasting my time and effort so I said goodbye to one-off recipes, precise measurements and rigid steps.
After three years of countless experiments, I finally figured out a method to the recreate authentic flavors that people were willing to pay for.
Long story short, I launched a successful pop-restaurant that was sold-out every time even though I had never cooked in a professional kitchen before or trained in culinary school.
But there was still something missing!
I could only accommodate 24 guests at a time. There was no way I could serve everyone on my waitlist. I was touched by how the flavors I created brought back cherished memories that my guests longed for.
I realized that I had to share these flavors in a way that was accessible to Indians living all over the world who craved a taste of home. So I combined the method I had figured out with my mission of helping others like myself deepen their cultural identity and it worked!
I was able to reach the Indian diaspora all over the world who had a deep longing to preserve and pass down their culinary traditions but didn’t know how. I was able to connect with people for whom food wasn’t just sustenance, it was a way to strengthen their connection with their roots.
But I had one thing on my mind, would my method work for others too?
So I turned my method into a series of step by step systems and started to test it out with a few Indians not residing in India.
All they needed to was three simple things:
Learn the fundamental techniques that are the building blocks of Indian cooking
Copy my method to implement these techniques in their everyday cooking
Focus on developing culinary confidence rather than memorize recipes
And it didn’t just work, it was transformative!

So, I made Lemon Tea today, based on the recipe mentioned in the Classroom module. Based on my expectations, thought it'd be another green tea and wouldn't try it again.
